Paneer Kebabs
Paneer is of course a cheese so strictly doesn’t fall into the vegetable category, it is really a dairy product so if you are vegan, replace the paneer with a suitable vegan cheese alternative. I’ve included it here because it doesn’t really fit into any other category on this site.

Pollo Enchilado
The Mexican name for this dish literally means cooked in a red chilli stew. As this is a site for barbecue cooking, I’ve modified the recipe slightly so it makes an excellent barbecue dish. You can play about with the chillies to suit your own level of taste/heat.
Chicken Yakitori Wrap
This is a recipe suggestion that uses chicken yakitori, the recipe for which is available elsewhere on this site.
Feel free to play about with some of the accompanying aments to the chicken and make it your own.
You could also cut the wraps into small bite size pieces and use them as an appetiser.
Chicken goujons with roasted pepper sauce
Roast the peppers on the barbecue, turning regularly until almost blackened all over. Remove and place in a plastic bag or sealed plastic box until cooled. Remove the peppers and peel away the blackened skin. remove the top and the seeds. Place in a food processor with the garlic and blend. Slowly drizzle in the olive oil until a smooth sauce is obtained. Allow to cool.
