Many people attempting a barbecue on a budget will invariably buy cheap sausages or burgers. With the addition of a few simple store cupboard ingredients, I will show you here how you can easily feed a family of six with one chicken. Your local supermarket will often have chickens for around £4 -£5, even less if they have them on offer. This requires a few knife skills but it is not out of reach of most people.Firstly remove the legs and thighs by cutting through the skin and twisting the thigh off. Find the joint between leg and thigh and cut through with your knife. Remove the knuckle at the end of the leg and keep aside for later. Remove the wings and chop off the tip and keep aside. cut the remaining wings into two pieces. Place the legs, thighs and wings in a bowl and use for five spice chicken. Carefully cut through the breasts either side of the breast bone and remove. turn over and peel off the chicken goujons. Use these for roasted pepper marinaded chicken goujons. Use the Chicken breasts for stuffed chicken breasts. Chop the remaining chicken carcase into about six pieces and place in a pot with the other discarded pieces. Cover with water and add a chopped onion. some chopped carrot, bay leaves, dried parsley and a few pepper corns and boil for about 45 minutes to create a stock (adding water occasionally if necessary). Use the stock to make chicken soup (recipe to follow). You now have a starter and a large variety of chicken pieces. Serve with boiled potatoes, barbecued onions and your choice of accompaniments.
