Ingredients
- 2 heaped tsp chopped fresh mint
- 2 tsp sugar
- 1 tsp salt
- 1 garlic clove, finely chopped
- 2 tsp white wine vinegar
- 2 tbsp white wine
Instructions
- Grind the mint with a mortar and pestle then add the sugar and salt. Grind until it becomes moist and add the garlic and grind to a smooth paste. Add the vinegar and mix well then add the wine. Place in a bowl and add your lamb. Marinade for at least an hour. When cooking the lamb, boil the remaining marinade until reduced by half and then use for basting the lamb regularly.
