Satay Sauce
A simple Satay sauce made with Peanut Butter and Thai Red Curry Paste which is also available on this site.
Ingredients
- 300 ml Coconut Milk
- 3 tbs Good Peanut Butter preferably an oily Peanut Butter
- 2 tbs Red Curry Paste (see this site)
- 2 tsp Light Brown Sugar
- 1 tsp Red Wine Vinegar
Instructions
- Gently simmer the Coconut milk until reduced by half.
- Add the Red Curry Paste and simmer for about 2 minutes and add the rest of the ingredients.
- simmer for about 10 minutes until you can see the oils separating out of the sauce. Add a little water if necessary to get the consistency you want.
