My wife, Elaine has been making this lentil soup for longer than I can remember. Whenever there is any event, party or gathering of people, she is always asked to supply a large pot of this soup. Whether it is a summer birthday party or a winter warmer, it is the ideal soup. This recipe was first published in 2013 although she has been making it a lot longer than that.

Elaine’s Lentil Soup
The perfect party soup, serve with nice bread like a fresh baguette.
Ingredients
- 350 g lentils
- Smoked ham ribs
- 400 g grated carrots
- 2 large onions chopped
- 1 apple finely chopped
- 1 clove garlic crushed or chopped
- 1 large potato chopped into small cubes
- ham stock cube if desired for extra flavour
- salt and pepper to taste
Instructions
- Boil ham ribs for half an hour then add all other ingredients. Cook for approx 45 mins to 1 hour then liquidise.
- If preferred, rather than chop ingredients, place altogether in food processor before adding to stock.
