The Mexican name for this dish literally means cooked in a red chilli stew. As this is a site for barbecue cooking, I’ve modified the recipe slightly so it makes an excellent barbecue dish. You can play about with the chillies to suit your own level of taste/heat.

Oriental Ribs
This is quite a traditional way to cook pork ribs. You can use this recipe to make succulent ribs without the final barbecue stage however, putting them on the barbecue gives a nice sticky, crispy finish to them.
