Ingredients
- 5 or 6 medium potatoes
- 1/2 tin chopped tomatoes
- 1 clove garlic, crushed
- 1 tsp paprika
- salt and pepper to taste
Instructions
- Boil the potatoes until almost cooked and remove from the heat and allow to cool. Cut the potatoes into cubes. Heat oil in a deep fat fryer and fry the potatoes until golden.
- Meanwhile mix the rest of the ingredients in a pan with some olive oil and salt and pepper to taste and cook for about five minutes until the sauce is a puree.
- Drain the potatoes on kitchen paper and add to the sauce, stir until coated and serve hot or cold.
