Salmon always works well on the barbecue, particularly with a flavoured marinade. With a ready made chilli jam it can't come much easier than this.
Depends on amount of salmon used
- salmon steaks or fillets
- chilli jelly or jam
- chopped fresh coriander
- Dissolve the chilli jelly with a little water to thin it down and mix in the chopped coriander. allow to cool and pour over the salmon. Allow to marinade for at least an hour. Wrap in aluminium foil and cook on the barbecue for about 15 minutes until cooked through. Alternatively cook on a wooden plank, also for around 15 minutes. Serve hot.
